Banana Bread

This is my current go-to banana bread recipe and it has been rockin’ my kitchen this week.  Jesse came back from the village with about 6 bundles of small baking bananas (at 300/= per bunch!) the other day so we’ve been baking up about a loaf a day!

Ingredients:

  • 1/2 cup shortening (Tamu/Kimbo)(or 1/3 cup oil)
  • 1 cup sugar
  • 1/4 cup milk
  • 1 – 2 eggs beaten (depending on size of eggs)
  • 1 bundle of small bananas (about 5-7), mashed
  • 1 teaspoon lemon juice (optional)
  • 2 cups flour (can use combo of white/brown)
  • 1/2 teaspoon salt
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts (optional)

Combine the shortening and sugar.  Then add milk, eggs, mashed banana, lemon juice (if using) and vanilla extract.

Separately combine all other ingredients, then add to wet mixture.  Pour into greased loaf pan.  Bake at 375F (190C) for 45-60 minutes.

*Other possible add-ins: 1 cup flaked coconut, 1/2 cup chocolate chips, or 1/2 cup raisins/dried cranberries.
