BBQ Chicken Pineapple Quesadillas

Inspired by my favorite Pioneer Woman!

Ingredients:

  • 1/2 chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup chopped pineapple
  • handful of green onions, sliced
  • handful of cilantro
  • 2 cups shredded cheese
  • salt and pepper to taste
  • flour tortillas

I had some frozen chicken breasts saved in the freezer from our last trip to Kampala. But you could easily use a whole chicken here.  Boil the chicken until completely cooked and tender (I usually add a chicken bouillon cube in the water or this time I few tablespoons of garlic powder and salt for some added flavor).  Remove the chicken, allow to cool to room temperature and shred.  Reserve the liquid for chicken broth to use later in the week.

Toss the shredded chicken in whatever BBQ sauce you have on hand.  Get all your ingredients ready and near the stove top.  Layer tortilla with cheese, shredded chicken, pineapple, green onion (or red onion), cilantro and some s&p.  Top with another tortillas and cook over low heat until cheese is melted and tortillas begins to brown.  Flip and heat through.  Cut into wedges and serve.

For a full meal, serve with some coconut rice!
