Pork of the Week: Asian Marinated Pork Loin

As my daughter would say, this marinade is “easy-peasy-lemon-squeezy.”  So simple but delivers a very rich flavor.  I whipped this up for Jesse and Jeff for a man’s platter one night this week.  And by “man’s platter,” I mean, a plate of just meat.  Between the two of them they shared a pretty hefty size loin but had no troubles finishing it off.

Ingredients:

  • 1/4 cup soy sauce
  • 1 Tablespoon honey
  • 1 teaspoon minced ginger
  • 1/2 teaspoon minced garlic
  • juice of 1 lime (about 3 Tablespoons)
  • salt & ground pepper

Lightly salt and pepper the meat on both sides.  Mix up the rest of the marinade and pour over the meat.  Allow to sit for a few hours if you have the time.  We didn’t have the time, so it went right into the oven with the fresh sauce but the boys still had rave reviews.  Cook until it reaches an internal temp of 160.  Remove from oven and allow to sit for 5-10 minutes for the juices to settle.
