Pizza Sauce

A few months back my hubby came home with three sacks of ripe tomatoes he got at an incredible price in Luwero on the way home to Gulu from Kampala.  We made a weekend of it and stocked up on tomato sauce for pasta, salsa and this pizza sauce.  We canned the sauce, so when pizza night rolls around all I need to do is prepare the dough and it is the easiest meal possible!

We like our pizza sauce a little on the chunky side but you could definitely use pureed tomatoes if you want a smoother sauce.

Ingredients:

  • 2 Tablespoons olive oil
  • 1 medium onion, chopped
  • 3-4 cloves garlic, minced
  • 3 cups tomatoes, finely diced (or pureed)
  • 1-1/2 teaspoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 bouillon cube (chicken, beef, veggie – whatever you have on hand)
  • 1/8 teaspoon ground pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme

Combine olive oil and onion over medium heat for 2-3 minutes.  Add garlic and cook for 1 minute more.  Add all other ingredients and cook through.  Spread over partially cooked pizza dough and top with your favorite toppings and cheese.
